1 small chopped chicken (thighs, wings or breast)
1 egg
100 ml of milk or water (or something else)
The juice of 1 small lemon
400 g of sifted flour
1 heaped teaspoon sweet paprika
1 level teaspoon of curry powder
Half a clove of crushed garlic or garlic powder
Aromatic herbs (thyme, oregano…) to taste

1.Wash the chicken and remove the skins where possible. We drain it well and season it.

2.In a deep bowl we put the flour with all the other dry ingredients: paprika, curry, herbs and powdered or crushed garlic. Mix well until the flour is a uniform orange color.

3.Separate the flour into two halves and reserve one half in a covered container. On the other half we put the beaten egg, the lemon juice and the water or milk. Mix and add a little more water if necessary. The consistency should be that of a béchamel sauce.

4. We submerge the chicken in this paste and mix very well so that it is soaked everywhere. We let the chicken rest in this cold marinade for a couple of hours or more. It can be left in the morning if you are going to fry it at night.

5.We are taking the chicken pieces with some forks, we let the excess dough drain slightly and we pass them through the flavored flour that we had reserved. We seal well everywhere.

6.Fry in hot oil (although not too much because it has to be done well on the inside) until it is golden brown. It is best to pan fry because the batter can stick to the fryer rack.

7. Drain on kitchen paper and serve the KFC-style fried chicken.
