POTATO FRITTERS 😋

ingredients

1kg (2 pounds) of boiled potatoes
2 egg yolks
1/2 teaspoon nutmeg
Salt and pepper to taste
100g (1 cup) grated Parmesan
3 tablespoons chopped parsley
2 eggs
breadcrumbs to cover
1 block of mozzarella cheese

METHOD

-Peel and mash cooked potatoes.
-Combine the mashed potatoes with salt, pepper, nutmeg, egg yolks, and Parmesan.
-Cut the cheese into rectangles.
-Take a couple of tablespoons of the mashed potato and form it into a patty, wrap it around the cheese, making sure –it is completely covered.
-Beat 2 eggs and coat each potato fritter with egg and breadcrumbs.
-Fry for 6-7 minutes or until evenly golden.
