Fresh Blueberry Muffins


Muffin Batter:

2 cups all-purpose flour
3/4 cup sugar
1/2 cup unsalted butter, melted
1 cup milk
2 large eggs
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 cups fresh blueberries
2 tablespoons sugar (for sprinkling)


As you prepare a muffin tray, line it with paper liners and preheat the oven to 375°F (190°C).
In a large bowl, mix together the all-purpose flour, sugar, baking powder, and salt.
In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
Combine the wet ingredients with the dry ingredients, mixing until just mixed. Be careful not to overmix.
Gently fold in the fresh blueberries into the batter.
Fill each muffin cup about 3/4 full and sprinkle the top of each muffin with sugar.
A toothpick put into the center of a muffin should come out clean after baking for 25 to 30 minutes.
After the muffins have cooled in the pan for five minutes, move them to a wire rack to finish cooling.
