Ingredients:
1/2 cup unsalted butter, softened
1 cup light brown sugar
1 large egg
2 teaspoons vanilla extract
3/4 cup creamy peanut butter
1 1/2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 cup granulated sugar for rolling cookies in (optional)
Instructions:
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper and set aside.
Cream the brown sugar and softened butter in a mixing basin until smooth.
Beat in the egg, vanilla extract, and creamy peanut butter until fully combined.
Pour in the all-purpose flour and baking soda, mixing until just incorporated. Be careful not to over-mix.
Roll one or two teaspoons of dough into balls. . If desired, roll the dough balls in granulated sugar.
Place the dough balls about 1 inch apart on the prepared baking sheets. They won’t spread much during baking.
Optional: Before baking, use the tongs of a fork to press down on the dough balls in a crisscross pattern.
Bake the cookies for 7-8 minutes. After letting them cool on the baking pans for five minutes, move them to a wire rack to finish cooling.
